Ingredients

1 bunch medium carrots (about 1 lb.)
2 tbsp. butter
½ tsp. Sonoma Syrup Co. Organic Vanilla Bean Extract “Blend”
Sea salt
Freshly ground pepper
Fresh thyme

Directions

Slice carrots lengthwise. Bring a large saucepan of salted water to a boil.
Cook carrots for 3 minutes. Transfer to a colander and rinse under cold water
In a skillet, melt the butter and add the blanched carrots. Cook until tender, about 5-7 minutes.
Stir in vanilla extract, season with salt, pepper and thyme and serve.
