Sonoma Syrup is a donor to UC Davis Honey and Pollination Center at the Robert Mondavi Institute & Harry H Laidlaw Jr. Honey Bee Research Facility. Bee pollination directly or indirectly influences every third bite of food that humans consume; “Colony Collapse Disorder” has dramatically reduced the bee population in recent years. The UC Davis Honey and Pollination Center holds a number of events every year to educate consumers on bee health related issues. The Harry H. Laidlaw Jr. Honey Bee Research Facility is making amazing strides in their research on bee health and genetics and addressing the needs of the California agricultural community.

Yes! Sonoma Syrup Co. has a sustainability initiative: Our bottles are always glass, never plastic. The packing peanuts used in shipments are eco-friendly (100% starch based and will dissolve in water; you can recycle, biodegrade, or compost them), and our boxes are recyclable as well.

All of our Simple Syrups are handcrafted with real, pure cane sugar.
All of our Simple Syrups are handcrafted in steam kettles with pure cane sugar, and each fruit flavor or botanical has a handcrafted infusion process. We were the first all‑natural syrup company in the United States on the scene in 2002 to NOT use high fructose corn syrup or any preservatives, artificial flavors or colors – and we still never do!
There are no allergens (peanuts, tree nuts, dairy, fish, shellfish, soy, eggs, wheat) used as ingredients. However, our products are produced and packaged on equipment that may come in contact with peanuts, tree nuts, dairy, shellfish, soy, eggs, and wheat, so we cannot be 100% gluten-free certain.
Our seasonal botanicals, citrus, and olive brine harvests vary; so the color of many of our all-natural products may not match the color of the product shown here. This is normal and a result of our artisanal small batch production methods.
Since we use real cane sugar, extracts, fruits, and botanicals, these natural particulates do appear at times. The particulates in the bottle may separate and can float or sink to the bottom especially if they sit over a period of time. This should dissolve once shaken and would not cause concern. Sonoma Syrup Co. fruit syrups contain the acids from real fruit, which can cause milk to curdle. It is a natural occurrence and does not affect the flavor. A popular technique in coffeehouses is to add Sonoma Syrup to the coffee first, and then pour in the steamed milk. The coffee dilutes the acidity of the syrup so the milk can remain creamy.

Yes. We use pure and simple raw ingredients, which have not been processed to modify their proteins or DNA, in all our extracts.
All our Extracts are gluten-free.
We do not add any sugar, just simply pure luscious vanilla flavor.
Organic Alcohol is essential to our extraction process. We only use Certified Organic Non-GMO cane-based alcohol, not corn-based. It is also gluten-free.
Our cold process method extracts hundreds of vital flavor components to ensure the deepest richest flavor.
Bourbon refers to the geographic regions where vanilla beans are grown on the island of Madagascar. These beans are blended with Tahitian beans, which are grown in the South Pacific, French Polynesia and Papua New Guinea. These French origins are how vanilla planifolia, the “classic” vanilla, whose flavor profile is the most recognizable, became known as Bourbon vanilla. We blend two geographic regions of vanilla beans to create a blend to support cold and hot culinary applications in the kitchen.
Bourbon vanilla, the world’s most widely recognized vanilla, is complex and rich, and its dominant characteristics can vary slightly depending on the region in which it is grown. Madagascar Bourbon vanilla is deep and creamy, enhancing any ingredient it’s paired with. Tongan Bourbon vanilla is sweeter, and sharper, adding a standout floral note. Indonesian Bourbon is spicy and earthy. Tahitian vanilla is sweet, tropical, and floral—unique and unforgettable. By using the world’s finest vanilla beans from Madagascar and the South Pacific, the leading suppliers of the highest quality fair and sustainably sourced vanilla beans, we’ve been infusing flavor since 2002.
Pure vanilla extract must contain at least 13.35 ounces of vanilla beans per gallon. Our formulas are proprietary, but that is the minimum.
By law, Pure Vanilla Extracts must contain at least 35% alcohol and 13.35 ounces of vanilla beans per gallon. No other “flavoring agents” are allowed, including vanillin which is artificial. The only flavor permitted is what comes from the vanilla bean. Our premium vanilla beans are ripened on the vine to provide the richest ripe flavor, unlike other producers. Each vanilla bean is hand-selected and naturally cured. No sugar added for simply pure luscious vanilla flavor.

"Crush" refers to the crushed vanilla bean seeds we put in our Vanilla Bean Extract Crush® – no gum traganath used here and no need to scrape vanilla beans. We do the work for you. Shake and pour. It is the closest thing to real vanilla pods with tiny flavor-packed seeds.

What sets Sonoma Syrup Co.’s apart is the expertise of our vanilla business partner, dedicated flavor chemists, a 100-year history of innovation and experimentation, and a passionate love for this beautiful bean grown from an orchid and hand pollinated. Vanilla beans burst with more than 300 flavor components, which only extract can capture. We work with a manufacturer who pioneered a proprietary slow, cold, direct extraction to enhance each of these components. The most important difference is the beans selected for our extracts: vine-ripened and split, and carefully cured. Great beans create great vanilla.
Our manufacturing partner sources most vanilla beans from Madagascar, where they work directly with small farmers and artisanal curers. We work with a top company who own a plantation in Fiji, and also source beans from Tonga, Tahiti and Papua New Guinea.
Yes. Our Pure Almond and Pure Organic Almond Extracts are allergen-free. They are not derived from nuts. The flavor is extracted from oil of bitter almond, which is derived from stone fruit pits. It is safe for anyone with a nut allergy. Our extract production facilities do not contain any nut or gluten products. We use an allergen-free facility, and make food quality and safety our first priority.
Terpenes are a natural waxy compound found in the peel of a citrus like lemon or orange. The oil of citrus, pressed for extract, still contains these terpenes, which can cause the oil to become rancid and harsh. Removing them ensures a fresh extract with an extended shelf life.
Storage & Shelf Life FAQs
Sonoma Syrup Co. notes a "best by" date which is printed on the bottom round of the Sonoma Syrup bottle below the product label (Best Before date plus our product code and Julian stamp date to ensure we can track back any bottle, any time).
Our Artisan Infused Simple Syrups are best before 30 months from the date of manufacture (unopened). All Artisan Bar Mixers are best within 24 months from the date of manufacture, and must be refrigerated after opening (~6 months once opened and stored tightly sealed in refrigerator). All Artisan Extracts are best when used within 60 months from the date of manufacture and should be stored away from heat and in a cool, dark, dry location to maintain best flavor.
Our Artisan Infused Syrups do not require refrigeration (with the exception of Pumpkin Pie Latte Syrup). If refrigerated, like honey, they may begin to form sugar crystals. All Bar Mixers must be refrigerated after opening. Our Artisan Extracts do not require refrigeration, but should be stored in a cool, dry, dark location to maintain best flavor.
As with any all natural product, it is important to keep the cap clean and tightly closed. Store in a pantry setting of 65 to 75F degrees, and keep away from direct light, heat, and freezing temperatures. If using syrup pumps or pour spouts, cover with foil or plastic in order to prevent any possible natural airborne mold entering through the pump or spout opening. Our simple syrups are formulated to last a long time even when opened.
